Aviyal



Making  aviyal always had been a dream for me. It’s my fav dish in malayalee foods..
My mom is a gud cook.. still best aviyal i ever had was made by my meternal aunty ( aanada peramma) she’s the besssssssssssssssssst cook.. of mallu foods..
This aviyal i prepared with guidance from my mom..

Wat we need..

·         Vegetables like Snakegurad,  Cucumber Sooran-elephant foot Yam, Carrot, Beans.. (Actually a lot of vegetable can be used..  so vegetables of ur choice can go it..)-3 cups
·         Coconut grated( health conscious people can use less of this and insted can smash few cooked vegetables..)- 1/2 cup
·         Shallots.. important as its something gives u the taste- 8-10  medium size
·         Green chillies depends on ur taste--6-7
·         Salt—as per ur taste
·         Chilli powder- one tea spoon
·         turmeric powder- i take it as per my color requirement-1/2 tea spoon
·         Tamrind juice- ½ cup as per taste( this is something i always goof up with.. once u add more tamrind sugar can balance but it’ll spoil the whole dish)
·         Coconut oil -- one tea spoon will be enough
·         Jeera/cumin seeds – one tea spoon
      Curry leaves- 2-3 strands.. only for the flavor.. anyways we'll throw it out.. at least i do :P

How we make it:

Put chopped vegetables, turmeric powder and chilli powder in a vessel and cook well (avoid cooker as chances of over cooking is there)
Put half of the grated coconut and jeera into mixi and grind it a little add shallots and green chillies and again grind it.. ( we are not making chatni or jucie so don’t grind too much)
Add the rest half of grated coconut to the grinded mixture..  put the whole mixture into the already cooked vegetables
Once the gravy is cooked add tamrind juice and curry leaves
Once the whole thing is mixed and cooked well add coconut oil( actually u can switch off the flame)

PS: 

don’t stir the aviyal as coffee or sambar.. take care that the vegetables don’t get smashed else u’ll be serving a aviyal chammadi :P
With my experience please don’t refer my measure(or anyone’s) of masalas and coconut  as the amount of vegetables will decide how much of wat should be added.. only u can make wat u want :P
